Peanut Butter Chocolate Chip Cookies
Preheat oven to 350 degrees
1 c. extra crunchy peanut butter
1 c. organic light brown cane sugar
1/2 tsp. GF vanilla extract
1 tsp. baking soda
1 large egg
1 c. of hersheys dark chocolate chips
Mix first 5 ingredients in medium bowl, until well combined. Mix in chocolate chips. Using moistened hands, form 1T. of dough into a ball. Arrange the cookies on 2 ungreased cookie sheets about 2" apart. Bake cookies until puffed, and golden on bottom and still soft to touch in the center, about 12 minutes. Cool on cookie sheets about 5 minutes, and then transfer to racks to cool completely.
