HomeMade GF Granola



Preheat the oven to 350°.
5 cup old fashioned GF oats (please make sure they are certified gluten-free)
2 cups coarsely chopped almonds ( or preferred nuts or no nuts)
2 teaspoons cinnamon
1/2 teaspoon kosher salt
1 1/2 cups raisins
1/2 cup honey or agave
2 tablespoons canola or other vegetable oil ( i used coconut oil)
*Line a large cookie sheet with parchment paper. (preferably one with sides)*
Directions
While the oven preheats warm the honey and oil until it is well blended for about 5 minutes on low/ medium heat ( honey will become a thinner consistency when heated). Mix all of the ingredients together until all of the oats are well coated. Place the oats on a large baking sheet in a single layer. Bake for 12 minutes, then stir up the granola, then put the pan back in the oven. Repeat this process two more times (it could twice or four times for you, depending on your oven). You’re looking for the granola to be dry, golden brown, with a bit of crunch. 
**As the granola cools it becomes crunchier. Allow the granola to cool for about 30 minutes before sealing in airtight bags or containers. **
Makes about 9-10 cups of GF granola

its a New Year...

I'm baaaack...

Wow! There have been some great new products in the Gluten Free market over the last several months.  Way too many to share, however one of my guilty pleasures is the Udi's pizza crusts. They are so simple to make at home and you can add any of your favorite GF toppings. How about the Annie's organic GF bunnies ...OMG so addicting !! My favorite flavor is the GF snickerdoodle flavor. You can purchase these at many local stores such as, whole foods and target. ( Target has good sales on these too) Stay tuned for some more delicious GF foods to hit the grocery stores!!

Recipe of the week

Gluten Free Banana Oatmeal muffins

2 eggs
1 6 oz container of vanilla Greek yogurt
1 tsp vanilla extract
1/2 tsp baking soda
1 1/2 tsp. baking powder
1 tsp. cinnamon
2 ripe bananas
2/3 c of sweetener ( I use organic light brown sugar)
1 scoop of vanilla protein
2 1/2 c. of GF rolled oats
**SAVE THE PECANS FOR AFTER YOU BLEND ALL OF THE INGREDIENTS**
1/2 c. chopped pecans ( or desired amount)

Directions

Preheat oven to 400 degrees... while the oven heats up.

Add all of  the ingredients in the blender ( I ADD THE OATS  1/2 C AT A TIME)
Continue to blend until all of the ingredients are combined and batter is a smooth consistency.
Then fold the pecans into the muffin batter.

Pour the batter into greased muffin tins 2/3 full . Bake for 12-15 minutes or until light golden brown and toothpick comes out clean.

makes 12 muffins.

Stay Hydrated with Gluten Free Zico Natural Coconut water

Having had a GREAT work out this morning, I needed to hydrate and at the same time wanted to add some protein to my breakfast ... check out this hydrating GF protein shake recipe using CHOCOLATE ZICO...

Gluten Free Chocolate Protein Shake

8 ounces ZICO Chocolate Coconut Water ( Make sure it is cold)
1 scoop GF chocolate Whey Protein
1 scoop of Chocolate/ Vanilla frozen yogurt
1 tsp. natural creamy peanut butter

Place all ingredients in Blender and blend until is a rich and creamy consistency.

Top 5 Chain Restaurants in South Florida with Gluten Free Menus

5. Outback Steakhouse - They offer pretty good GF menu options and the best part is the GF dessert...yum! The chocolate thunder from down under is a decadent warm brownie served with vanilla ice cream and is a fabulous treat! Some locations even have GF bread , so be sure to ask your waiter for a Gluten Free menu.

4. Pizza Fusion- This restaurant offers GF pizzas and they are delicious. The pizza crust tastes as "real" as it gets and they are conveniently located all around the South Florida area.


3. Bonefish Grill- Everything gluten free on the menu is labeled GF in large letters , making it easy to read. Another plus is there GF alcohol menu.


2. PF Chang's China Bistro- This chain restaurant offers a great variety of gluten free options, 28 to be exact. The GF lettuce wraps are my favorite, and their portions are large enough for two people to share. Don't be fooled when you taste the food, it tastes like it is full of gluten...and it's NOT.


1. Legal Seafoods- Although, it was a close tie for first place between PF Chang's and Legal Seafoods... Legal had to win first place for its extensive GF menu. They offer 49 gluten free items, including chowders, appetizers, seafood, and croutons. Overall the wide variety of GF items at Legal made it an easy win.
